I'm just about to bottle my first attempt at a czech pils as well. If mine is anything to go by yours will be outstanding. I used;
morgans golden saaz pilsner
1.5kg coopers pale malt
15g saaz @ 20
15g dry hopped

What yeast did you use? I tried a Coopers Lager toucan with US-05 and after a month I found the isohop bitterness very harsh. Settled down with time but I think using S-04 or nottingham would be a better bet.
Was thinking of putting the following down
1 can Morgans Golden Saaz Pilsner
I can Morgans Unhopped Extra Pale malt
25g Saaz at 20 minutes
12g Saaz dry hopped
My question is will the 25g at 20 minutes be too much and make the brew too bitter?
Thanks everyone. Took another reading last night and hadn't moved, still 1013. The sample was 16C and the hydrometer is calibrated for 20C so with the correction its close enough to the 1012 I was after. Added gealtine last night and will bottle on Sunday after crash chilling.
Without knowing what's actually in a E.S.B 3kg kit, does anyone know what the FG should be? Mine is at 1013 after 10 days, does this sound about right?

So, the consensus is that
a) I'm not going to ruin everything by adding gelatine before fermentation has finished
and
B) its a worthwhile exercise
OK cool thanks for the advice. How effective is gelatine anyway? I usually just leave my brews in primary for ~14 days with the last 2-3 pretty cold at about 2 degrees. Will I see much difference with the gelatine?
Just a thought I had about using gelatine to fine (I've never done it before). If I add it when racking to secondary after about a week in primary, will it stop any secondary fermentation, or will there be enough yeast in suspension after the fining to finish up?

Got a fermentation fridge so temp isn't an issue. Have only brewed ales so far though, down to about 16C with US05.
Was thinking 500g LDME and 750g Dex + Saaz steeped.
HEard that the S189 yeast could be a better bet than S23?
Looking to do a pilsner kit with some extra saaz for my next brew. Have been looking at the following kits

Wal's Pilsner
Thomas Coopers Pilsner
Anyone done one of these kits and how'd it turn out?
Recipe was just the two tins of coopers original lager and the us-05 yeast.
I'm not very good at describing flavours but its a really harsh bitterness, almost acidic.
