    What yeast did you use? I tried a Coopers Lager toucan with US-05 and after a month I found the isohop bitterness very harsh. Settled down with time but I think using S-04 or nottingham would be a better bet.

    Was thinking of putting the following down 1 can Morgans Golden Saaz Pilsner I can Morgans Unhopped Extra Pale malt 25g Saaz at 20 minutes 12g Saaz dry hopped My question is will the 25g at 20 minutes be too much and make the brew too bitter?

    E.s.b 3kg Kits

    Thanks everyone. Took another reading last night and hadn't moved, still 1013. The sample was 16C and the hydrometer is calibrated for 20C so with the correction its close enough to the 1012 I was after. Added gealtine last night and will bottle on Sunday after crash chilling.

    Thanks everyone! So, the consensus is that a) I'm not going to ruin everything by adding gelatine before fermentation has finished and B) its a worthwhile exercise

    OK cool thanks for the advice. How effective is gelatine anyway? I usually just leave my brews in primary for ~14 days with the last 2-3 pretty cold at about 2 degrees. Will I see much difference with the gelatine?

    Just a thought I had about using gelatine to fine (I've never done it before). If I add it when racking to secondary after about a week in primary, will it stop any secondary fermentation, or will there be enough yeast in suspension after the fining to finish up? Thanks

    Which Pilsner Kit?

    Got a fermentation fridge so temp isn't an issue. Have only brewed ales so far though, down to about 16C with US05. Was thinking 500g LDME and 750g Dex + Saaz steeped. HEard that the S189 yeast could be a better bet than S23?

    Recipe was just the two tins of coopers original lager and the us-05 yeast. I'm not very good at describing flavours but its a really harsh bitterness, almost acidic.

    Oily Scum

    Feeling a lot better now. After a bit more reading it seems a few people get this on the odd occasion without it being an infection. Theory that it is a. hop oil or b. surfectant in the starsan.

    Yeah thats what I was thinking too. Soaked them in sodium percarbonate for a week, rinsed them out with the hose then put them in the dishwasher. Just before bottling put some starsan in and then tipped it out. No rinsing afterwards No white spots or slime so maybe it is just something left...

    Just cracked one open. No gushing and it smells like beer to me. Had a taste and it has a fairly "harsh" bitterness, but I think thats just cause the toucan would be pretty bitter anyway. If it was infected what would it smell like? Off milk? Varnish? Or something else?

    Just having a look at a toucan of coopers lager I put down 4 weeks ago. Tasted OK when I was bottling it but it seems to have an oily scum on the surface of the beer in the bottle. Its sort of hard to see in the picture but is it normal?

    Show Us Your Hop Scale

    I bought the same set (1kg max 0.1g increment) off dealextreme.com for $16 They sent me the wrong one though, 100g max 0.01g increment. Still does the job though.
