Decided this morning that I had enough bits and pieces of ingredients to brew up an Old Peculiar clone, based on recipes on this forum and elsewhere.

However, I only have three yeasts in the fridge: S-04, Wyeast 1187 (Ringwood Ale) and Wyeast 1882PC (Thames Valley II).

Recipe's designed around an OG of 1.060 and an FG of 1.016.

What's the best choice of yeast from those three?

Cheers,

Tony

Ringwood was originally a Yorkshire yeast from the Hull Brewery used with stone square brewing and whilst Hull is not near the Pennines (Masham), it would presumably be nearer to the yeast used in O.P. than the others - which derive from Southern English breweries originally.

Thanks Bribie. 1187 is pitched.

Cheers,

Tony
