several weeks ago after a few beers :chug: I threw a few ingredients together in preparation for a brew day...didnt know what I was doing and cant seperate them now..Just got round to milling them today and I dont really know what I was thinking of when I put them all together and now not sure how to proceed wrt Yeast and hops to suit :blink: .

Grain bill is

4.5kg Pale malt
.110 pale Choc
.320 Wheat
.220 Caramunich 1
.150 Dark Crystal
.150 Carapils

what is this???

Hops available include:
cascade
amarillo
Chinook
Nelson Sauvin
PoR
Centennial
CTZ
willamette
and halertau

Yeast avail include:
1272 American Ale
1084 Irish Ale
recultured CPA
US05
Notingham
S23
Swiss Lager

what would you do?...if it makes any difference I do BIAB and no -chill.

it depends on what you want, if a pommy style hop with williamette to 25 to 30 ibu and use the 1084 and if a yankee a combo of centenial and cascade with a bit of amarillo late to 30-40 ibu and the 1272.
 
Its gonna be dark.

BUT I would, with the hops you have;

Bitter with Chinook.
Then Equal amount of Cascade and Centennial for flavour addition.
Then Equal amount of Cascade and Centennial for araoma addition.

Sort of a Black APA...

Nah, bitter with the CTZ and bang a little Willamette in with the rest of his suggestion - goes well in a seppo brew. Not too much, just enough to add a little complexity without undermining the citrus thing. Maybe a little CTZ late for a touch of that piney thing.

Definitely the 1272 if you end up leaning heavily on the US hops.

So, as a bittering hop?

brilliant. very clean, jimboley uses it also. i love it. my IIPA is bittered with it and has hop additions at 20,10 and 0. It has a fruity aroma to it and i'm try to get the latest season from him too. just the kids and bills means no brewing for a while..

Here is the recipe

Original Gravity (OG): 1.078 (P): 18.9
Final Gravity (FG): 1.020 (P): 5.1
Alcohol (ABV): 7.66 %
Colour (SRM): 14.0 (EBC): 27.6
Bitterness (IBU): 108.4 (Average)

90.98% Pale Ale Malt
3.01% Carapils (Dextrine)
3.01% Chocolate, Pale
3.01% Vienna

2.7 g/L Columbus (12.6% Alpha) @ 60 Minutes (Boil)
1.3 g/L Columbus (12.6% Alpha) @ 20 Minutes (Boil)
1.3 g/L Columbus (12.6% Alpha) @ 10 Minutes (Boil)
1.3 g/L Columbus (12.6% Alpha) @ 0 Minutes (Aroma)

0.1 g/L Whirlfloc Tablet @ 10 Minutes (Boil)

Single step Infusion at 66C for 60 Minutes. Boil for 60 Minutes

Fermented at 18C with Safale US-05

But yes CTZ is a good bittering hop
 
Looks like the start of a "Robust Porter" to me.

I'd go light on the hops and let the malt character shine through Al, should be ready for the June competition.
 
Also love a CDA/black IPA and reckon that malt profile.

CTZ bittering
Lots of cascade, Amarillo at the end. American yeast and if your feeling frisky, dry hop with Nelson.

Going down that road, I'd add some black patent malt and williamette or EKG hops added for more flavor than aroma
 
never used black patent..but I can get hold of some readilly..how much would you suggest in with the existing grain bill? is it 30-50g? 80-120g? or more like 150g+ ??
