no heavy spicy ale for me, my christmas beer (brewing this weekend) is a weizen...it's almost certain to be a hot day.

1 cinnamon stick, broken up

1/4 tspoon nutmeg

1/4 tspoon allspice

1 tspo
on ginger grated

2 whole cloves

zest of 1 orange and some juice, about 5
0 mls

3 cardomom seed pods, crushed

All mixed with 1 cup of boiling warer
and honey and added last 15 min of boil

I brewed a version of this, close anyway, and fermanted with T-58 in August 09.
Was cleaning up around the place on the weekend and discovered the 2 dozen stubbies I had put aside to age after I found it a little too much at xmas 09.
Well this is now a smashing beer, clean, crisp and the spices have blended and mellowed beautifully.
Better make another batch as this lot won't get past this Xmas.

I am starting to think seriously about a spiced pumpkin beer for Xmas. But I only have this weekend free before Xmas and won't be here for Xmas anyway. Maybe it will be a new years brew to put down for winter.
 
A biere de noel that will not be ready until Aussie Day :blink: . Too many beers I want to brew and not enough, time, kegs, + grain to brew them all.
I'm brewing a strong saison along the lines of Avec Les Bons Voeux this weekend, I might sneak a bottle in by Xmas but I'll definately try one for New Year (asuming it'll be fermented out by then :rolleyes: ).
 
There will be an APA (of course), an ESB and a Belgian Saison if I can pull my finger out and get brewing over the next few weekends.
 
I'm making a little creatures pale ale clone some time over the weekend

also I've had a Christmas cider fermenting for a couple if weeks now, consisting of;
apple juice, honey, cinnamon sticks and vanilla essence
I tested it the other day and it's a little dry, might back sweeten it with stevia
 
Just reading throught his thread and the "xmas beers" that some people make with cloves & spices etc...Being in Aus could you really down one of these on a possible 30+ degree day?
Totally agree!

Thirst quenching beer is a must. And for that matter, if i'm making a keg of beer for Chrissie, chances are the rest of the family would want a bit, so Saison and Gueuze are out, and probably any sort of wheat beer. So really just a good Pilsner should surfice!
 
No chance of getting one brewed now for xmas, (got plenty of beers ready though)
but I've got a few deadlines in the coming months:
Son's birthday - mid Jan, (Saison bubbling in garage atm :icon_cheers: )
My birthday - early Feb
10yr anniversary ale - Late feb - better plan something big... or a framboise for the lovely wife to taste.
