I am doing a Andrew QLD pale recipe(Pilsner malt with sugar) but don't necessarily want a Coopers clone. I have 1272, 2112, Notto or maybe an oldish starter of Coopers Pale yeast. Chasing a nice clean finish... easy drinker for the boss. Haven't used 2112 before but leaning that way, or Notto???? Help please, I hate decisions.

If using American hops, use 1272. If using UK hops, use Nottingham. If you could be bothered fermenting at lager temps and then lagering, use 2112.

I'd use the notto myself. 1272 is great for hop character, but the beer you're about the ferment isn't really a hop driven beer. Mind you, it could be nice with a lager yeast, just have to wait a while for it.

Not sure what hops you have used but I have been using a heap of notto lately for quick, clean tasting beers.
