hey all,

I've got a batch of belgian wit in primary at the moment (5days) made from a coopers wheat kit, mix of DME + glucose, orange peel, coriander seeds and cultured hoegaarden yeast.

I read that belgian wit styles are best drank green/fresh. How fresh are we talking? Im thinking of bottling in a couple of days.

I brewed a wit on the 5-10-2007 and was drinking it on the 20-10-2007,wasn't bad.

But really was good from the 26-10-2007 till empty.Hmmm might have one now.

i find 3 to 4 weeks after bottling is usually best...i start sampleing at 2 tho :p

oh who am i kidding i drink the god dam hydro test water!

Witbier is best consumed during waking hours.

Seriously, 3 weeks in the bottle should be OK for first samples, followed by heavier consumption if it's tasting OK.

Try not to ferment or store too warm if you are using a true Wit yeast, as you will get far too much phenolic flavour and aroma.

Haha. Was just thinking the same thing.

I lived above a bar/restaurant in Belgium where the A.M. bar girl (who was coincidentally an Aussie) couldn't be stuffed making espresso. So on those days when she was on shift, I'd order coffee and she'd pour a Hoegaarden without fail.

Worked for me.

Tradition

Hoegaarden tradition states that the first Hoegaarden of the day must be finished in three gulps. The amount taken-in during the first and second gulp is of no concern as long as the third gulp finishes the glass.

Makes me think of the 500ml wrist breakers that are served all over Europe.. but who am I to poke a stick at tradition.
