What Stout To Make?

Hi guys, i've never made a stout before, and i've only really had a Guiness and young's double choc stout and they wern't bad.
I don't like coffee or liquorish flavours, but i did like the creamyness of the Guiness.

I've had a look at the DB, but to be honest i dunno what im looking at.
Could someone suggest an AG recipe i should try?

Btw, i got stacks of JW ale malt, could i use this for a base of a stout?
 
Creaminess in guiness is more a result of the nitrogen in the beer than the recipe.
Perhaps consider NOT making a stout at all if those coffee/roast flavours are not to your liking.
Take a look at the style guidelines for Schwartzbier, German Black Lager.. its fantastic!
Its black, malty, low on hops, super drinkable and has very low levels of acrid and roast flavours most people associate with stout.
Hell, ferment it as an ale and pick up some fruity characteristics we all love from english beers as well.
Most people will identify it as a stout, because only real beer nerds know about schwartzbier.
 
Dont have my Beersmith with me so no recipes available, but give this a go.

Try this

Ale malt - 84 %
Roast barley - 5 %
Flaked Barley - 4 %
Choc malt - 3.5%
Dark Crystal - 3.5 %

Fuggles or EKG to 30 IBU total

One addition @ 60 min
another @ 10 min

Mash @ 68-69 Deg C
Wyeast 1028 or Safale S-04
 
Hmmm maybe, i would like to at least try a stout. I like roast flavors, just more wanting to avoid overbearing coffee taste. I really like dark ales.
Ill also look at dark lagers, but i don't have lagering gear, and i tried a dark lager once and it was terrible! Maybe just a bad example.

Alright MattC, ill try that. Are you familiar with coopers yeast? I have a nice culture of that in the fridge, do you think that'd suit?

P.S. Is that a white rabbit in your pic? LOOOOVE that beer.
 
An oatmeal stout will give wonderful malty flavours, a "full" mouthfeel, and not too OTT on roastiness. Worth splurging out on a liquid yeast for IMO. Yum!

Exactly what I would have suggested. Slight roastiness, but very drinkable. A stout hater's dark beer.
Personally I love stout, but I brewed Doc's schwatrz the other day and it's creamy and sooo well balanced. Definitely give this a try, even if you do try the stout first!

Well a guiness recipe is pretty simple:
- pale malt 70% (yes you can use your joe white malt)
- flaked barley 20%
- roast barley 10%
- OG 1040.
- Wyeast 1084 is guiness yeast (perhaps)

If thats Coopers yeast from the bottle? Then thats what they use in their Best Extra Stout, a brilliant beer (my fav Coopers beer) so you will be good to go. Keep ferm temps low if you dont like the fruity esters.

I second the oatmeal stout suggestion but would add in that dropping out the roast barkey will lessen any coffee contribution. I'm also a fan of toasting the oats and I'd use a bit of carrafa special to replace the colour from the RB. A bit of black malt won't go astray either.

Got an oatmeal version of this stout on tap at the moment - 3 shades of stout

It's the highest rated stout in the recipeDB for a very good reason :chug: :icon_drool2:

Yep, you can buy them from your local HBS, but you can just as easily use Instant Oats from the supermarket or health food shop.

Get the instant ones, not the normal oatmeal, as they will have been pre-gelatinised. Without gelatinsiation, you would need to cook them up prior to adding them to the mash.

i wasn't sure how much to add to this (47L batch), and weather or not to take something else out.

Do i need to crush/mill it before mashing it?
