Just got a Imperial Stout into the fermenter. 40 liters @ SG 1092.Pitched Wyeast 1084.IBU 55.Temp 18c.FG 1016?
Grain bill:
46.8 % Bairds Golden Promise
32.1% Weyernamm Pilsner
15.9% Bairds Amber
5.2% Bairds Black
1.750 kg Raw sugar
Total grain 12.60 KG ( minus sugar)
Expected ABV 10.21 %
Single addition of Tassie Nugget Plugs @ 8.9% AA @ 60 mins
Boil 90 Mins.
Had to drop Efficiency from my normal 82% down to 75% and got just over my predicted 1.088.
So all is good.Just have to wait about 6 months to give it a try. B)

But seriously, that seems like a fair hit of amber.

Iodine was ok a real thin film on a chilled white porcelain plate.It was quite easy to read.Yeh a far smack of amber but I think it adds some thing special to stouts.I would be less generous with porters and dont much like it in other styles.I will have to wait and see an then maybe adjust for the next Imperial. I think after two pints I wont know the difference. ;)
 
Looks like it'll be nice. Not that much darker malts in there. I wonder what gravity you'll down to with that yeast. Guess you might be ok with the sugar in there. I like amber malt, in bitters as well as darker beers. We just made a RIS too, so how about comparing notes at Xmas time. :p

I was a little concered about it being too light in colour but its nice dark black brown.No roast in there so its not bitter like an Irish stout.Sure has a lot of hop bitterness though.I think I will get down to 16-18 FG as I have added loads of yeast and nutrient and will let it ferment at 20c.Time will tell.If its any good I probaly wont remember Christmas. :unsure:
