This is the recipe that I am brewing today it is a Weizenbock
4.25 kg Wheat Nalt
2.10 kg Pilsener
200 gm Choc Malt
Protein Rest 27.21 lt of water @ 52.5 C Hold mash for 35 min at 50 C for 35 min . Sacch : Decoct 11.05 lt of mash and bring it up to 68.3 C and hold for 45 min . Heat to 75.6 C over 10 min hold for a further 10 min , recirculate and boil .
First Wort Hop :
16 gm Hallertauer @ 90 min only because that is what I had left
50 gm Tettnang @ 30 min
35 gm Hallertuer @ 15 min
20 gm Hallertuer @ 5 min
Yeast starter 1.5 lt of WLP 300 Hefeweizen @ 18 C pitching temp .
So far it has gone well , I missed the pre boil gravity by 2 pts , so I am happy about that . Just added the Tettnang with 30 min to go . 15 min to go just added the 35 gm of Hallertuer whirfloc and I.C. 5min added the 20 gm of Hallertuer . Flame out at 4:30 pm . Looooong day .
