Hi All,

I'm planning to get together with some mates to brew something for Christmas, and I'm looking for inspiration. I like the idea of wassail, which from memory (Mosher is out on loan) is essentially a spiced ale - just the thing when it is snowing and getting dark at 3 in the afternoon. I've had some beautiful examples in Portland Oregon in the mid '90s - one of the factors that got me in to home brewing - but they're too rich and intense for Christmas here.

Anyone got specific ideas/recipes for an adaption that'll be more appreciated on a blazing summer's day?

My Chrismoose Beer.
Pale ale base, spiced for christmas.

Mine was an extract one but citymorgue2 did an AG version, recipe is in the thread below.
Dial back the spice levels a little if you want it ready in time for christmas, mine took a long time to balance.
Bloody great when it was though.

Cheers, that looks like a good option.

I happen to have a packet of T-58 in the fridge. Before I moved to mostly using liquid yeast, it was pretty much my house yeast. :)

I'll definitely use restraint on the spices - less is more, always.
