I've recently bottled a choc porter where I used a 50g of of vodka soaked roasted cacao nibs for a hint of chocolate flavour. They were soaked for 24 hours and then the whole lot was added to primary 1 week after fermentation began. Total time in the primary was 2 weeks so the choc mix was in there for 1 week.
I didn't take a measure of the amount of vodka I added to the cacao but it was just enough to cover them as I wanted to add the least volume possible - so it wasn't much.
While having a taste while bottling, I think I can get a tiny hint of the vodka that was added to the brew. I tasted the brew before I added the vodka too and I think it was better before I added any extras.
As I plan to age this beer for a while; do you think this taste will settle down and fade at all?
I have seen spirits added to brews dicussed in a few places but nothing on any mention of if the taste of the added spirits change with the age of the beer. I'm hoping it fades somewhat as I didn't want that flavour in the final product.
Can those who've added other alcohols to porters and stouts (or any style of brew really) comment on how they go with some time in the bottle?
