Ok fella's this one is out there even for me.

I have 2 mandarine trees choc a block full of fruit I estimate probably 100kg+. Some how a mandarine beer doesn't appeal to me but it would be such a waste to do nothing.

So I am contemplating doing an alcoholic version of Doc's lemonade?

What do ya reckon?

just juice it all then chuck in a few packs of us05... see what happens :p
 
I'm with Sammus. Juice them, pitch a good yeast and see what happens.

I had a few kilos worth of kumquats a few years back. I juiced them, boiled their skins with some syrup and made a kumquat brew of sorts. VERY brutal, but the the flavour of kumquats is like that anyway, mandarins on the other hand, they're tasty!

I reckon try your hand at making a mandarin wine and then fortify it with a decent (not top, not low) quality brandy. Should become a great warming liqueur for next wintertime (2010).
 
Not taking the piss here as in regard to your recent wild yeast issue <_< ... but be sure to kill off the wild yeasts before fermenting. Mandarin wine... could be interesting.

Hmmmm? I would need to feed nutrients to the yeasties I doubt there much in there for the little guys

My other suggestion would be a mandarin and wattleseed dark ale, stout or porter but they would be best with subtle hints and 100kg is a lot.

Fruit salad?
 
Have a chat to Bconnery about his sour belgain orange, he will be able to give you some pointers.

I have made apple wine before with apple juice and yeast nutrient was a necessity. You could also bump the alc with some cane sugar or dex.

BTW any brissy boys want some let me know happy to give them away rather that waste them. They are really sweet, juicy and have that very pleasant mandy twang.

Nutrient is a must for a straight citrus brew.
Though I like Manticle's idea of making into a dark beer.
With 100kg of fruit, it would have to be a huge brew, but if you were to combine that with a rich stout/porter base than had a chocolate-like flavour wiht plenty of sweetness to balance the acidity of the fruit, that would be very delicious indeed.
Bit like the way Thorogoods Dark Malted Apple Beer is awesome. Very malty and dark, but a big amount of somewhat sour fruit flavour.

Lol funny thing is, I wasn't taking the piss :p seriously, even if you do just 5 or 10l first to see how it turns out.

I've got a fruiting lemon tree with about a billion lemons on it... I wonder what fermented lemon juice tastes like?
 
Just juice them and drink.. Bloody beautiful and a great source of Vitamin C for these winter months... ;)

Or juice and freeze and then make Frappes in Summer with some Vodka.......... :icon_drunk:
 
yeah I also like mandarin juice straight, I'd save a hefty qty for regular juice consumption. Pity my lemons can't be used for that :p I'll probably preserve most of them for moroccan dishes and the like.

Ill grab a few this weekend mate, ill make use of them..... Mandarin Creme Pots.. Yum... ;)

Its not cheap to buy also....
 
Brewer Pete would probably be the bloke to ask.

I'm using a bit of mandarin zest tomorrow in a wit in place of orange because I could only find sweet oranges.
