If I had spring fed water as an easy source I'd be using it!

Water is the major ingredient in beer, so it can make a good difference. The only thing if you are making AG you would need to get it analyzed, and adjust the number as needed.

Isn't that why brewing happened in a lot of places? The extended boil and alcohol killed the bugs.
