All,

I'm using my old, semi broken big fridge to ferment a wort in. I'm using Safale and initially aimed at 18deg, using a power timer.

Into day 4 now and SG is dropping (albeit slowly) - but my temp has dropped to around 16.5def. The packet says 15deg is the lowest effective range, so I should be ok.

However, is it a rule of thumb that a lower temp, longer, slow primary will give a better beer?

Should I bump it to 18deg to be safe?

Leave where it is 16.5 is fine, I am doing two at the moment at 16.5c one is SafeAle US 56 and the other is Danstar Nottingham yeasts. Works for me :) 16-18c
 
Will ferment happily at that temp - I always brew at the lower end of the temp range using safale, unless I want some fruitiness, like in an English bitter.
