I have a massive fig tree that every year produces more figs than i can use and give away.

Always wondered about adding figs to beer but never have.

I think you would need a lot more figs though as they aren't a very strong flavour. I was thinking about 2-3kgs for a 20L batch.
I was thinking of doing a 10L test batch using dried figs rehydrated in vodka.

I was going to use amarillo as the hop addition, but I'm not sure if this is the best choice. Is there a better hop to use which would support the fig flavour and aroma better? I would only be doing a bittering addition.

Fruit and hops don't mix well, don't worry about matching the hops with the fruit, just bitter to achieve balance (very low, 8-15 IBU) with a nice clean bittering hop @ 60 to go, I recommend magnum, though many others will work well, let the figs be the star of the show.
