Am flying blind at the moment and trying to give CSA style a shot. This is what i have whacked up and just throwing it out there for some advice. Am still yet to make a decent Sparkling and hoping it wont be to long untill i find something i really enjoy. Im yet to update beersmith with Australian style profiles as im not sure where i can get the info from

Why the amber candi sugar? Replace it with clear. Replace the extract with more pale malt if you can, or lower the batch size accordingly. You'll find it hard getting the same dryness (and colour for that matter) using extract. I would also drop the caramel malt addition (use JW caramalt, its about 50EBC) to about 1%. Mash low (63ish).

Not too sure about the hops, if the PoR are pellets I would be very wary using that amount as it is reported by others that the pellets can be rather harsh. If this is the case, I'd replace some of the 60min addition with a more neutral bittering hop (and probably remove the flavour/aroma addition). Aim for about 35IBU maybe?

The real deal starts around 1.050-1.052 and finishes around 1.006-1.008, though this low FG may be hard to get a big strong starter will help. Ferment at 19-20C.
 
I might half the 60min addition of POR and add Nelson and the flavor with Nelson and Cluster. I have played with around the recipe but i wanting to abit more research then ill post another atemptd up

Recipe from the 150 Clone book: OG = 1.058 FG = 1.012 IBU = 25 SRM = 10 4.5 AAU's of POR for 60 min, 4.5 AAU's of POR at 15 min, 4.5 AAU's of POR at 0 min.

That would make a nice beer, but nothing at all like csa
 
I've made a few of these now, and have settled on this recipe for what is very close to a CSA.

You need to increase the bitterness, as CSA is really quite bitter, about 40IBU.

JW Pilsener malt 98%
JW caramalt 2%
Calcium sulphate to 200ppm

Single infusion mash 63C for 90min

Single bittering addition of POR at 60 min to 40IBU.

Recultured CSA yeast, built up to a 2L starter.

Ferment at 18-19C to give some of the pear and banana characteristics of the yeast, without being overpowering.

OG = 1.048 - 1.050
FG = 1.006

The high attenuation of the yeast really allows you to push up the bitterness. 40IBU of POR really is not very bitter with such a dry finish.
Reducing the bitterness or cutting it with another hop just ends up with a beer that, whilst very nice, is not the same as a CSA.
Also POR is really not harsh with the low FG. It's taken me half a dozen attempts to get over my aversion to upping the bitterness with straight POR, but it really does work.
You also don't really need the flavour and aroma additions. This beer is really one where the KISS principle pays off.

The yeast is very fast too, 3 days to get to FG.
