I've made a black ale (about three times) from a recipe that I picked up from this forum and whilst the beer itself tastes absolutely beautiful I can't get a good head on a glass from any of the batches I have made.
It goes something like this.
25l batch
JW pilsener 4.5 kg
Bairds chocolate 0.25 kg
Bairds crystal 0.25 kg
22 BU POR hops 45 min boil
Safale yeast / Wyeast Euro Ale 1338 (I've done both)

I've also made what is a brown ale by using all Joe White's pilsener, choc and crystal for a fantastic drop with a nice creamy head.
Any suggestions brothers?

Hi Breezy,

I make basically the same beer using 4.5kg of IMC pils, 250g of TF chocolate and 250g TF dark crystal.
POR to 22 IBU and US56.
No head retention problems at all - maybe add a touch of wheat?
Got the recpie from Tony on this site.
I agree makes a top beer - like OLd only better :beer:

I just made another dark ale, similar to a Tooheys old on Wednesday.

Recipe for 26 l

JWM Pilsner 4.2 kg
JWM Munich 1.13 kg
Carafa sp. II 0.45kg
Wheat malt 0.28kg
Chocolate malt 0.12kg
Crystal 120l 0.12kg

Nugget 25 grams 9.8% a/a 60 minutes
Cluster 23 grams 6.6% a/a 20 minutes

IBU 32
Colour 32 SRM

Nottingham British ale yeast.

OG 1058 @ 78% efficiency

The first batch I made of this was a pearler with great head retention.
