Hi,

I just did my first double batch 40l of beer. but i only decided to do this tonight. so my yeast starter i for only one brew.

I was wondering if it's better to let it build up in the starter over night, and leave my brew cool and hopefully not get any germs?

Or should I pitch half a starter in each?

what are the pros and cons of this?

if it's just a slow start then that's fine. but if it's a high finish then i'd probably prefer to wait.

Hi mate, I would build the starter overnight for sure.

Pros = Yeast will grow quicker in a smaller wort environment

Cons = 12 hours of wort on its own - not an issue necessarily if you have good sanitation practices - some yeasts take a while to get going in any case
 
go the starter and pitch at high krausen the yeast will be fired up and ready to work.
 
what does having more yeast achieve though?

just quicker ferment or lower gravity in the end?
 
Hey guys,

just an update on this. i had a 1.25 lt starter that was really going off it's head!
i split it in 2.

pitched one and left the other for another night, adding wort to it to.

the one is pitched straight away was finished in 3 days! a record for me (the real record was from grain to empty keg in 10 days)

the second i pitched the next day. say story finished in about 3 days.

So healthy yeast is what it's all about.
