I currently have a Morgans Yukon Brown fermenting . It starting bubbling in the airlock normally and continued for several days. !9 days after initially putting it down it is still bubbling very occasionally. What should I do. Temperature has been OK at 25 Deg. Will it harm to wait until fermentation has completely ceased?

Hi mate, no it won't hurt anything to let it ferment out. It's only when beer sits on the cake for an extended period of time- weeks even months after fermentation has completed, that you risk a process of deterioration called autolysis, where essentially the yeast begins to consume itself.

If you are worried about it and have a secondary fermenter, rack the beer off the yeast cake and let it finish in secondary, but as I say, it won't hurt to let it finish in primary.

Autolysis is accelerated by high temperatures. 25degs is starting to get up there. What's the hydrometer read ?

There's a couple of articles that are good to read for advice on this kind of stuff to.
 
I bet it's done. Take a FG reading as suggested above. CO2 continually comes out of solution as temperature and atmospheric pressure changes, causing the airlock to occasionally bubble. 19 days at 25C, I bet it was finished 14 days ago.

Thanks for your help, it's now 21 days and bubbling appears to have ceased though I'm not sure if the SG is a bit high at 1011. I'll probably bottle it tommorrow and see how it goes. Thanks again.
