Hey guys

First time brewing with Brett so a bit unsure. I have a Saison/Brett Blend yeast that is 6 months old.

I have read that making a starter can cause the Sacc to develop in excess of the Brett and will cause the yeast to become out of the intended balance. That being said, the yeast is 6 months old and I am concerned there will be stalling if I under pitch.

OG is 1.060.
Yeast is Wyeast 3031- Saison/Brett Blend.

Thanks

FYI- I ended up direct pitching. Will report back with outcome.

FYI- I direct pitched without a starter. The yeast chomped through it pretty quick. The Brett is now starting to take hold and the gravity is below 1. I'll bottle once there is some stability in the gravity but it's tasting great
