so i pitched my second brew tonite, a coopers Canadian Blonde with the intentions of making a blushing blonde as per the coopers recipe on their site.

My first brew was a straight lager with Ye Olde towel and fan method of cooling, it did alright, a month in the bottle now and theyr not too bad at all!

Earlier today tho i decided to treat myself and picked up all the bits for a fridgemate to hook into my second fridge downstairs. its now running quite nicely, although i think i pitched the yeast a bit too hot ~28 degrees, but hopefully over night that will come down to a constant 21.

Sounds good.. But if you can it would be better at 18 deg. What yeasties are you using..
 
i thought of putting it at 18, but the recipe says 21 and im using just the yeast that comes in the cans so would 18 be too cold? or just fine?

Yeah . Kit yeast would be OK at 18 or 21. But now is a good time to move to better yeast.
