Just a general question.
In this land of eternal summer, I sometimes wonder about chilling wine either just before (whilst still in the Demijohn) or just after bottling to ensure that there is no chance of further fermentation. When I say chilling, I simply mean putting it in the 'fridge for a few days.
Please don't shoot me if this is a cardinal sin, but any comments would be gratefully accepted.
