I'm currently preparing for my first extract brew. I thought I'd try the recipe listed on the Grain and Grape website:

Grain and Grape Bitter 2500g Light Malt Extract
125g Crystal Malt
200g Malto Dextrin Powder
30g Willamette Hops
20g Goldings Hops
1/2 Tablet Irish Moss
Water
1 Packet of Safale Yeast

WRT commercial beers that I can find in Melbourne, what should this be comparable to?

Chris, That sounds like an attempt at an English bitter/pale ale type beer.
While not being bang on something like Boags Wizard Smith, Gage Rd London whatever it was, or get a British one from Shephard Neame, Badger, etc. First Choice particularly usually has a good range of English beers, just check how old they are on the bottle, or else a good bottle store like you have in Melbourne, cloudwine or the like, should be able to help you out.
But anything that describes itself as an English bitter.

What sort of beers do you like?
I have a lot of recipe links and recipes of my own from extract days...
Otherwise searching around US sites where extract brewing is more common is also a good resource.

As I am getting into the extract stage myself I am chasing down recipes. If you have any that you would be willing to pass on that would be fantastic.

Dark and malty is my preference. For example, I prefer Murphy's Stout to Guinness. I also like Kilkenny. I don't like anything too bitter or floral.

Do you have any extract recipes that would be suitable?

As it's my first attempt at an extract brew I'd prefer a recipe that doesn't have too many ingredients in case I stuff it up!

Americans have access to more types of extract than we do but don't worry about that. Start with the standard ones we can get and adjust with grains and or Morgans specialty range and you can make almost anything...

Here's a porter and an Irish Red, both extract, which could be up your alley.

Porter (20L)
1.5kg Morgans Dark Unhopped LME.
1kg Morgans Chocolate Malt.
1kg Morgans Dark Crystal Malt.
250g dark dry malt extract.
50g Cascade Hop pellets. (This makes a US one. Sub Goldings or something English for a more "traditional" one.
SAFALE S-04 Yeast

750g Dark Unhopped LME, 250g dark DME, 25g Cascade at 60.
15g Cascade at 30. 1
kg tin Chocolate Malt at 15.
1kg tin Dark Crystal Malt, 750g Dark Unhopped LME, 10g Cascade at 5.

Irish Red (21L)
1.5kg Amber LME.
1kg Morgans Caramalt Master Blend.
500g Malto Dextrin. (I would recommend dropping this to 200 or removing it altogether and adding more extract)
100g Crystal 60L
30g Roast Malt
30g Northern Brewer hops.
30g Perle Hops
Safale S-04 yeast.

Steep grains for 30 mins.
30g Northern Brewer@45.
1kg Morgans @30.
Malto Dextrin & LME@15.
30g Perle hops @ end

Whilst we are talking about recipes, I am going to be making an extract lager of some discription with 3Kg of light liquid malt and some steeped grains. Question: I am after a roasted after taste and was thinking of putting some roasted grain in for steeping. How much would give me the after taste without altering the color to much? I was thinking of between 50 to 100g. To much or not enough?

Wow I didn't quite realise that such a small addition would make such a huge difference in colour. You spoke of Brewsta. I'm thinking this is a brew calculator like Beersmith? I have used beersmith before but find it hard to calculate everything from imperial to metric. Is Brewsta in metric? If not can you recommend a good brew calculator that is in metric?

Drew,

You can set the measurements in Beersmith to metric.

Click on 'Tools', go to 'Options' and then click on 'Units'.

You can then set it all up to suit your requirements.
