Hey All,

would appreciate any feedback anyone has on a semi-sweet stout i'm plannin on brewing this weekend - maybe up the IBU's and reduce late addition hops?

4.00 kg Pale Malt, Maris Otter (Thomas Fawcett) (3.0 SRM) Grain 77.97 %
0.40 kg Oats, Flaked (1.0 SRM) Grain 7.80 %
0.30 kg Caramunich III (Weyermann) (71.0 SRM) Grain 5.85 %
0.23 kg Choc Malt Pale (bairds) (800.0 SRM) Grain 4.48 %
0.20 kg Carafoam (Weyermann) (2.0 SRM) Grain 3.90 %
25.00 gm Pearle [6.00 %] (60 min) Hops 17.4 IBU
10.00 gm Goldings, East Kent [4.70 %] (20 min) Hops 3.3 IBU
10.00 gm Goldings, East Kent [4.70 %] (5 min) Hops 1.1 IBU
1 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale
 
Stouts are best done with bittering hops only.

The recipe looks confusing (by name anyway), you say 'sweet stout' but there is no lactose? Its more of being just a stright up oatmeal stout

The oatmeal % is on the money, BTW, you should probabaly look at upping the roast malts. you will want atleast 10% roast malts (in particular roast barley) to get the 'stout' character.

Otherwise (IMO) its more like a porter.


If you want a decent oatmeal stout, i'd adjust it as follinwg (malt bill adjustment only, if you want those hops, go for em. I'd go an EKG 60min 30-35 IBU addition)

Maris Otter 75%
5% Munich
Oats 5%
Caramunich III 5%
Carafa Special II 4%
Roast Barley 6%

IMO Carapils is pointless in this recipe, especially when you have the oats.
