Hi All,

Just after a recipe check with emphsis on the grain bill, I've never played with SN before, but reading other threads I think I'm good with the % rate.

I'm after something dark, malty but not having that burnt stouty flavour.

to soften the burnt stouty flavour the midnight wheat can be:

A - steeped cold overnight in 2lts of water and added at mash out
B - Added at mash out, but have it crushed seperate and run though the mill twice.

Both will take the edge off and smooth out the flavour however you will still get a pretty solid flavour profile of that kind of beer, stout.
 
I've used 200g of midnight wheat in a Rye IPA - I thought the 'smokiness' may have come from the rye dust stuck to the concealed element in my Crown urn but perhaps (based on Dan's comments) it came from the midnight wheat! Anyway, I still really like it, it's got this smokiness without the hassle of smoking anything.. they are some great tips though and perhaps that'll help you avoid the mistake I made!
 
Looks good and tasty just brew it and if you don't like it send it to me for more testing .
