Post Boil Gravity...why?

I`m a cuber and I find the post gravity reading very useful. I design all my recipes around 40L and then on brew I change it to 32L ( 2 x 16L cubes). Where the post boil reading comes in handy, is to see how much or if I dilute down to 40L again what my brew will be like. Most of the time it is spot on. So come pitching day I know that I need 8L of pre boiled water to add to get my OG as per recipe. I hadn`t brewed for sometime and when crushing the grains I forgot if I`d added the extra grain or not, any how I was a little under my target, but because I already new what the 32L gravity reading was then I only added half as much water to get my OG. Yeah there will be more hops, the colour will be slightly different blah blah blah, buts its 4L difference added to 32L. I can deal with in this case.

I`d imagine that you would or could do the same when cooling and pitching on the same day.
