Off smell and taste

Hey fellow brewers, have my 4th ag brew in the fermenter 50 ltr batch been there for two weeks at 18-22 deg.

9.7kg American 2 row
500g crystal 40
500g wheat malt
300g munich 1

nelson sauvin @50
cascade @20
nelson sauvin @10
cascade @0

mash temp 66 deg for 60 min.

boil 60 min.

safale us-05 x2

Up until 2 days ago beautiful sweet hoppy flavour and nice malt balance. Today went to take a hydrometer reading and have a taste and noticed a slight strange smell. The taste was a bit off as well a bit like off cabbage. i am really dilligent with sanitization and never had an off beer in 20 years of brewing. Hope you guys have a more pleasant theory than the dreaded Bacteria.
 
Off cabbage sounds like dms - not something I'd expect from that grist and boil. However any precursor not converted during the boil and removed can convert and reveal itself later.
DMS can also come from infection, in which case it will likely worsen.
There are other sulphur producing compounds too. For now I would wait and see if it goes away or if it gets worse.

If it doesn't get worse but doesn't improve, you could try either krausening or flushing the beer with co2.

yeah cheers Manticle I will wait another week and monitor it. I guess if it gets worse it's down the drain?
 
No surprise, ditch US-05, brew the same beer again using M44 and post results.

Just had this but mine had a weird taste early on, I'm assuming infection. BUT I carbed it up and after 3 days the taste is fading, I thought I'd be tipping it but it might come good.

Flush with co2 and see how you go

Are you and manticle talking about purging the headspace in the primary FV, or something else? If so, what does that achieve? Is the supposed purpose to stall the bacteria that's causing the DMS?
 
Sorry for the ignorance guys but how do i achieve the process of flushing with co2.

co2 production and active fermentation can drive off dms. If its cause is bacterial though, you won't be able to fix it. Co2 needs to go through the beer though.

Poll - are you a kegger or bottler?
If bottling, your best bet is krausening but I'd just wait a few days first.
 
Bottler at the moment Manticle so i will wait a few days and let you know what its like then. Thanx again guys....Cheers
