I've got a few random bits lying around and wanted to have a crack at a darker style American ale.

Based on what I've got I'm thinking:
23L:
1.7kg Light LME
1.7kg Amber LME
0.5kg Wheat DME (leftovers from another brew)
150g Chocolate Grain (steeped)
150g Crystal 60 Grain (steeped)
250g Dark Brown Sugar (for a bit of extra ABV and EBC).

OG: 1.060; FG: 1.014; ABV: 6.4%.

I've got about 40 to 50g each of:
- Galaxy
- Amarillo
- Simcoe
- Cascade

Plus 10g of Citra.

Was thinking a 5L boil with bittering @ 30 mins with Simcoe, then doing a 15m and 5m addition of Cascade, Simcoe plus either Amarillo or Galaxy to get to a total IBU of between 35 and 40. Then doing a 30g dry hop.

Yeast would be US-05 in a active starter.

Any thoughts on this? I'm not sure it will all work - it's a bit of an experiment.

It sounds like a very tasty brew.

All the extract, sugar and grains get you to the right OG and EBC for a brown ale (assuming you are going for a 23l brew)

40grams of simcoe in a 5l boil @ 30 mins would bring you to around 28IBU. You could probably do the boil with the Wheat Extract, and then add the cans in for the last few minutes.

If you love cascade, you could do 20grams at 15 and another 20grams @ 5 mins.

That brings you to about 36IBU

You could always bump up the cascade a bit (25g and 25g brings it to about 38IBU)

Then dry hop with the amarillo (or galaxy) yum!
 
I love using cascade in dark ales. Looks good but I'd leave the wheat out and use it for a later brew.
