I'm about to put down a maerzen for Oktoberfest drinking (if it lasts that long). I've got 1.7kg LDME, 1kg munich malt, 1.5kg morgans amber, 100g of 5.7% pearle, and 100g of 2.5% Hallertau for a 21L batch. Only thing we didn't work out before I left the LHBS was the hop schedule. If I do a 6L mash and a 1L sparge (really need a bigger brewpot) adding the LDME after flavour addition, how much of the Pearle should I use to hit about 24IBU (style is 20-28)? How much of the hallertau should I use for flavour and aroma to hit the style? Depending on the calculation I use in beersmith, I get a range of 22 - 48IBU for 80gm of Pearle, and I'm buggered if I can decide which one to pick, but 80gm sounds like an awful lot of hops.
Also, how much of the LDME should I reserve for bulk priming, again to meet the style?
