Hi guys,

I'd like to make a very fruity, flavoursome ale with a complex flavour. Struggling to think of a commercial brew similar (i'm sure there are lots of craft ones, just dont have any names off the top of my head). Was thinking pale malt with a bit of vienna. Maybe citra, cascade and nelson sauvin hops? And maybe either notto or us05 yeast?

If anyone has any really nice, complex fruity beer recipes, please share. Or advise on anything (malts, yeast, hops, ferment temps etc) would be very much appreciated.

A Saison would be right up your alley then.

I would PM Gopha or Phillip who have both made them recently (gee I love dobbing in other brewers on these posts! :D ).

Ross's summer ale is another cracker... did it about this time last year in preparation for sitting in the pool on Australia day. My recommendation is to do it with Wyeast 1007 at 16C

How about a belgian blonde

for a 70l batch (80l preboil)

Pils 10kg - 69.7%
Vienna 2.5kg 17.3%
Wheat 1.5kg 10.5%
Carapils 400g 2.4%

50g Northern Brewer (9.5%) @ 60 21.1 ibu
90g Saaz (2.3%) @15 4.5 ibu

Wyeast 1388 (for plenty of fruity notes)
ebc 5
OG 1.047
IBU 26

I made this recently, but split the wort. I used the hopping above for half & styrian goldings / Pacific hallertaurer for the other half. The goldings / pac hal is a bit sweeter.
 
I reckon you will get more from your yeast if you want complex flavours.
Perhaps pick a good yeast and go from there.
My pick for a complex American style Ale yeast would be 1272.

Mmmm, crozdog. Have cut and pasted, will give this a crack next as I was thinking of something with a belgian yeast base.

Hi Duff,

That recipe was off the top of my head. I just looked it up & found I ended up doing a 100l preboil batch as follows:

5kg wey bo pils
5kg joe white pils
5kg wey munich 1
3kg wheat
500g wey chit (from the anhc show bag)

ran off 50l to the kettle & 50l to the hlt. boiled the 1st half with NB @ 60 for 23 ibu & 2.5 ibu saaz @5. the 2nd half used Styrian goldings @60 for 17.5 ibu, pac hal @ 15 for 8 ibu & 3.2 ibu pac hal @ 5

Ended up using that grain bill & upping the batch size to use up some left over bags of grain & hops ;)

Came up with this cause the old man asked me to put together a fruity belgian xmas quaffer that wasn't too strong. Tried a bottle of each last night for the 1st time... tasting good. bring on a hot xmas & a bowl of prawns!

Fruity hops or fruity yeast?

If fruity hops, this is one of mine I'll swear by http://www.aussiehomebrewer.com/forum/inde...amp;recipe=1276 but I'll bet you there's a thousand recipes in the db that will approach or trump it including KT's Hopburst, Argons little critters, Tony's LCBA and and Ross' NS summer ale.
 
Smurtos golden is an absolute cracker of a recipe - would consider it a deliberate gateway AG session brew. OP was asking for complex and fruity and I got from that that they wanted something a little more full on.

I have no hesitation in recommending the GA as a great beer, having tried various other brewer's attempts at it (rarely disappointed)

That Nelson Summer and 1007 is a GREAT summer beer. Light and refreshing with subtle hop presence... nice. Even better in the pool come Australia Day. :chug:

Sounds awesome. Im gonna rack to keg tonight, a german ale something something I have been cold crashing for the last week. Made with 1007, I'm going to harvest some of the slurry, use it to ferment out my next batch, which was going to be a Ross' NSSA. Convenient!!

Any reason you have decided to go with this yeast?? Its my first time using it, haven't tasted it yet (except outta the fermenter) but it looks promising...

1007 finishes wonderfully clean, especially when done at around 16-17. Used it a few times, with the NSSA and a Kolsch. A little bit of cold conditioning for a week and you'd swear you're drinking a lager. Really lets the light malt and subtle hop character come through.

Also, what would happen if i put in some pils malt to lighten it a little, maybe 1kg? And i think maybe i have too much munich and vienna?

Munich and vienna amounts as part of an overall grain bill look fine but I would personally think about upping the IBU to balance soe of the rich maltiness they will give. I also find fruity hops do well witha bit of bitter. I'd look at going 30-35 (30 if you wanted to keep it quaffable as mentioned).

If you really want to keep it at 26 then maybe bump vienna down a bit. 500g of munich is far from excessive though.

Do you really only lose 3 L when you boil a batch at 23 L FV?
 
Thanks manticle. Do you think the hop schedule looks plausible?

And nah, dont lose 3l- just havent set it up yet. Need to, i know it will affect stuff. just gettng and idea at the moment.

Also, i guess it is more of a personal choice thing, but with those 3 hops would you use cascade as the bittering? Or something else?
 
Hop schedule looks fine at a glance although personally I like a flavour addition at 20 minutes for most brews.

I can't comment too much though as I've not used galaxy or NS (and haven't been a fan of most beers I've tried that do).
