O.k, i have noticed lately that i get more malt flavour when i brew with mostly pils, say, over 90%, and a few character malts, than using a large amount of munich or vienna malts. Does anyone else find this??. At the moment i have a 4% blonde, and a 5.8% mocktoberfest on tap. The blonde is 97%pils, and 3% caramunich1 ( or thereabouts ), and the mocktoberfest is 20% munich 20% vienna, and te rest is mostly pils with a touch of melanoiden. Anyway, the blonde has much more flavour, and even ( to my tastebuds ) more of a malty body. They are both fermented with 1007, and both came down to similar FG's ( both around 1010. I not long ago did a real o'fest that had a fairly similar grain bill, but used whitelabs bock yeast, and it was the same, not much body, and not a lot of malt flavour considering the amounts of munich and vienna. The pils malt i use is weyermann german pils, and im pretty sure the munich and vienna malts are joe white. I guess im asking, do people get more malt flavour from mostly pils, and a small addition of character malts, or from mostly vienna and munich malts??.

If i dont make sense, don't worry, i haven't had a beer today!!
 
One thing... Weyermann Malt, or any continental European malt, will generally give you more of that traditional german lager 'maltiness'. That may be one reason for the difference that you're tasting.

Experimentation is the key, because your system may give a very different flavour from certain malts, plus every person's palate is different...but I think that the malt supplier could expalin the difference. To test it, try brewing a pilsner with Weyermann malt and one with Joe White...

or try using Powell' pils malt. Damn near impossible to get any flavour out of it.
 
Damn, I just brewed a partial using powells pils malt.....

Oh well time to tip it down the gurgler.
 
Dont tip it, it's not bad as a filler malt, it just needs something to give it a kick.
 
i agree with marky-mark yer answer's right there with the german vs aus malts. weyermann pils has a nice flavour of its own, but a pilsmalty flavour. jw malts i am not a fan of - i get very shallow flavour from them. german malt beers always have a longer finish in the mouth for me.
 
In my experience I find that none of the Aussie Munich malts come remotely close to Weyermann Munich 1 and 2 for a great depth of maltiness.

That is my experience also. Not bagging the JW malts - I think the JW Export Pilsner is a top malt, but in terms of the Munich malts there is no comparison IMHO. I use Munich a lot as both a specialty and as a base malt, and having used both the JW and the Weyermann Munich malts, I think the Weyermann is definitely the way to go.

Did some more "research" last night, and my blonde definately has more malt flavour, and body than my Mocktoberfest. Maybe i'll just stick to mostly pils based beers, say, over 90%. Or, i'll try to get some weyermann munich.

I like the JW Vienna. It has a rich, full flavour, so much so that it is easy to use too much of it. I use no more than 50% of it even very malty styles (vienna, bock). Others might have different views. (stop laughing PW).
