Hi folks has anyone tried culturing up the yeast from Le trappe witte. Ive got a litre of starter made up from one bottle at the moment and it fired up fairly well but I'm now wondering if it is a lager strain or the original wit strain. The brew itself was quite nice and quite different to hoegaarden..any help appreciated..

Hi,

La Trappe Witte is definitely made with a wit strain..

good luck with the brew!

thanks Bakkerman,

Yep I know that much but do you think that it's the same strain for bottling as well?? On the website it says in dutch that the beer is not filtered or pasturised and it's bottle conditioned so I'm presuming same strain...what do you reckon...

ps the starter I've made so far smells "witty" but who knows...Maybe a taste test to see...

Hockadays,

La Trappe bottles with the original strain as far as I know, they might add some fresh yeast at bottling to ensure a good conditioning on the bottle. (It's obviously not pasteurised).

Thanks my friend,

I see your from the that part of the world so you would be the most in the know, I'm keen to try some of their other beers as well. Have you been to their brewery ??

I like the Wit and the Triple. The Quadrupel is a little to sherry like for me. I've seen the brewery, it's in the abbey but the brewing is done by staff supplied through Bavaria breweries. It's a fairly modern affair and you'd be dissapointed if you hoped to see bald headed blokes in habits hand stiring in copper mash tuns...
