recipe

+- 6 kgs of ale malt
7 grams of Chinook @ 60 mins
90g
Hallertau Mittlefrueh AA 2.6% 80grms @ 20 mins
60 min mash SG around 1045 (not 100% sure after sparging etc)
60 min boil FG 1060
no chill overnight in cube
US-05 today in the ferment fridge @ 17' SG 1052 about 21L (ex craftbrewer fresh wort cube)

was going to dry hop with 20G Cascade today ?

sitting on about 1012 now in the fridge at 17' tastes ok but needs something....
the issue is to catch the end of fermentation i should dry hop now
but i have to leave town Friday lunch and return / bottle beer Tuesday

should i dry hop today, cold crash on Friday (ferment should be done)
bottle on Tuesday

will the dry hop be ok that long in the fermenter?

I would say the ferment has finished Maheel. The hops will be fine in the fermenter while you are away, crash chill when you get back.

I dry hopped a week after fermentation finished, then cold conditioned for a week. Fantastic beer.

I might suggest, if you don't want a one dimensional beer (especially given you are using ale, not pils malt), you might consider a whack of some fruity American/Aussie/NZ hop - Amarillo, Chinook, Citra, Nelson Sauvin, Galaxy, something nice. If you'd done pilsn malt, I'd dry hop with a noble to go with the Hallertauer, but with ale, definately american.
