Krausen Failed To Drop In Us-05

Currently fermenting an Amarillo Golden Ale with US-05 American Ale dry yeast. First time I have used this yeast and was surprised that at the end of 8 days the krausen had still not dropped.

I don't use an air lock and 7-8 days is my usual end time for an ale.

FG shows that it has finished and I will rack it off today but never had a krausen fail to drop in any of my previous beers.

Is this an aspect particular to this yeast?

US56 does that. Just forms a big greasy krausen and stays there. Use a hydrometer to check SG.
 
I have the same issue with this yeast quite often, although not always. I just rack it as normal, and a few days after, give it a chill. This drops just about everything out.

I normally rouse the fermenter and then chill it. It normally always drops out then

I rack it, leave majority of krausen in primary.
chill and rack again since I bulkprime.

Ditto the racking.

With US-05 I find that my beers end up clearer with a week in primary and then a week in secondary.

They never seem to clear as well if I leave it in primary for 2 weeks.

The cloudy beers in my kegs agree with this. When it was labeled US-56, it used to drop bright in primary... iirc.

Hi Hoges,

Quite natural for an ale yeast, especially a nice healthy one - They are top croppers & some yeasts like 1318 leave a solid pavlova that never drops.
