Well, after a few bigs day of watching SWMBO give birth to our second girl. I am proud to introduce
Saphie Hart Buchanan.

Gotta say, I'm not disapointed it's a girl just dissapointed I'll never get a boy as this is our last. Oh well just have to start to piss sitting down

OK, here a problem I have with a 40lt recipe i ordered over this hectic time (I had it crushed and mixed when i bought it)...too much crystal malt
What can i add to fix the recipe. eg. more pale malt?

4.00 kg Pale Malt (Barrett Burston) (2.0 SRM) Grain 41.67 %
2.00 kg Munich II (Weyermann) (8.5 SRM) Grain 20.83 %
2.00 kg Wheat Malt, Pale (Weyermann) (2.0 SRM) Grain 20.83 %
1.00 kg Carared (Weyermann) (24.0 SRM) Grain 10.42 %
0.60 kg Carafoam (Weyermann) (2.0 SRM) Grain 6.25 %
25.00 gm Amarillo [8.60 %] (60 min) Hops 12.5 IBU
25.00 gm Amarillo [8.60 %] (40 min) Hops 11.0 IBU
25.00 gm Amarillo [8.60 %] (20 min) Hops 7.6 IBU
25.00 gm Amarillo [8.60 %] (15 min) Hops 6.2 IBU

I'm not really sure, more pale malt would certainly counter some of the caramel sweetness though.

On a related note, has anyone done a mash with a high crystal proportion like this, but mashed it really low (62ish) to kinda dry it out? Does it still come through too sweet?
 
Id probably look at upping the pale malt and IBUs to counter the crystal..

Or if thats not easy and you have enough hops on hand, hop the living **** out of it, im talking an insane amount of IBUs, over 100, and alot of late and dry hopping will easily counter all the caramel sweetness ;) In fact all that crystal will hold the hops up high and it will be awesome :icon_drool2:

BTW Congrats she is as cute as a button. Obviously takes after mum?

Congrats on the new arrival

as chap said up the base malt and maybe a higher IBU Barley wine

Bottle it in champagne bottles and open it on her b day each year making sure you can share one with her in 18 years.

Only suggestion I'd make re recipe is to up the base to the point where the carared+carafoam is < 10% total.
 
Iv'e worked it out. Mix all the grain very well then halve, add 5kg extra pale malt to each half.

Leaving a nice grain bill for two 40lt brews.
Using the joe white pale malt coz my LHBS has it.

This is how it will look for each 40lt batch

Boil Size: 47.96 L
Estimated OG: 1.058 SG
Estimated Color: 6.6 SRM
Estimated IBU: 39.3 IBU
