So my uncle is a bee keeper as a hobby and I can get the stuff for free.

When using the honey its' straight from the hive and i'm wondering if wild yeast is a concern?

Honey straight from the hive has antibacterial and antifungal properties. It also is so concentrated in sugar that the osmotic pressure keeps yeast from surviving so it is really rare for honey to spontaneously ferment. Once it is diluted though you do need to be careful as any wild yeast landing in it will cause a wild fermentation.

Cheers

Been keen on doing a Braggot, but need to find out where to get the Honey in bulk at a reasonable price.
