Hey all,

I am planning a honey ale using extract ingredients. Recipe as follows

1 x 1.5kg can pale malt extract
1kg LDM
500g honey
250g crystal malt
20g POR hops (10.4%AAU) 30 min boil
10g Hallertauer hops (4.7%) 5 min boil
15g Hallertauer hops (4.7%) 0 min boil

Was thinking of using 180g honey to bulk prime brew prior to bottling!!!!

Does anyone have any ideas regarding the recipe or using honey to bulk prime???

I wouldn't use honey for the priming. Its notoriously slow to ferment out - it starts very fast then tails off and the last bit takes forever. You could end up with some uneven carbonation. Adding it when fermentationm is finished, yeast is stressed etc you could end up with no fermentation at all. Its also hard to work out how much to add so you could end up with bottle bombs. I'd bung it all in the brew and just use dextrose for priming.

Cheers
Dave
