Here's a Link to the herms thread I started when I built mine, there are a couple of photo's that might help.
I must say I am very happy with my herms and the results I'm getting, step mashing is not a problem and is very accurate as well.
It's really good to be able to set the step temp on my controller, walk away and when I come back the temp is sitting exactly where I want it. The other thing I like is the uniform mash temp, since the pump is recirculating the wort throughout the entire mash duration the temps are uniform with no cold spots.

I keep the probe cable coiled up and in a zip lock bag to protect it while washing etc. Going to put an inline connector in the cable closer to the probe so I can remove as much of the cable as possible for wash down.

Are you using 1/2 inch, I had a look at the probe and it looks to big for 3/8. TIA
 
Sorry I meant the coil tube, did you use 1/2 inch?
Patrick I can lend you a 3-3.5m 3/8" copper coil if you are still in the "sperimenting" stage.

Yep half inch Patrick.

Build it, steps are never again a PITA. Most of my brewing time is like being in the army, "hurry up and wait". Dial up the step temp and set the timer, timer goes off, check temp, set timer, timer goes off, set next step temp, set timer, ho hummmm, back to AHB.
 
Keep your connecting hoses as short as possible. No point in introducing more room for temp loss when the whole idea is temp maintainence. Can be a lot of heat lost in long hoses.

Justin is spot on keep em short, I have to add 14 to my strike temp to allow for hoses and cold pump. You can buy hose lagging tube from Bunnings.
 
I'm not sure if you've seen the Hong Tai copper guy on eBay, he lives down the road for me though and does 18m coil of 3/8" for $80 and 18m of 1/2" for $100 which seems alright. dunno how much postage would be though.

In my experience he travels a bit and can sometimes take a few days to get back to emails. When I met him to pick mine up he was a very keen seller, and even emailed me for follow up and everything, so I'm pretty sure he will get back to you asap.
