Help with toucan recipes

Does someone mind explaining 'toucan' recipes - i.e. two cans of LME to make a single batch?
What are the benefits?
By using two cans am i cutting down on other ingredients or would i need to use twice as much brew enhancer?

Two cans are not LME (light malt extract). They are 2 cans of extract. Unless you want to make rocket fuel, then you do not add further fermentables.
Most cans will have hopping included, so no need to add further hops, unless you want to grow hairs where you normally don't.
If you use 2 cans of unhopped extract you will need to do some sort of boil to add hop bitterness by adding hops.
Mostly, toucan (two cans) are used to brew stouts, but feel free to experiment.
Some sort of brewing software might be useful to work out what you are doing.

Toucan brews are just using two cans of hopped extract instead of one can and sugar or booster/beer enhancer. It's a convenient way to get a stronger, more bitter beer which is why stout drinkers often do it but you can make IPAs or English Strong/Old beers this way as well. The disadvantage is cost.
