Last year I made about 4/5 Belgian Witbiers and I really enjoy the "White Ale" and felt I needed to expand my wheat beers so this year I went about making Weizens, hefe's and dunkels. They are a bloody tasty beer style that I really enjoy. What Im wanting to know is can I replace the noble hops like Hallertau, Splat, Tettnang etc etc with Cascade for bittinering?

I have heaps of Cascade and think that of all the hops I keep available that the Cascade to 13ibu may not even be noticable seen as though its relatively low AA like noble hops.

One US brewery makes a popular red lager (Riverwest Steinbeer), with Cascade in for a full 2 hour boil, followed by Mt Hood for flavour and aroma. One of my favorite beers, but not one for hopheads. After that long boil, the Cascade adds a distinctive herbal quality not at all like one associates with the hop. It might do the same at -60, if you have that in mind. Who knows?

I once used Cascade for bittering and found the bitterness a bit harsh, but that was in a high IBU pale ale.

So you'll probably like the result if you are using Cascade in an early addition to contribute up to 20 or 25 IBUs. Beyond that, maybe not.

I've also used Cascade in a first-wort hopping and did not like the bitterness, but others have done the same and liked the result.

Cascade works well at 60 mins. Note that this was on a 60min IPA style of beer though, with lots of little hop additions throughout the boil.

You'll still get some aroma from it... I guess the best way is to just try it out! I guarantee you it won't make it undrinkable if it goes wrong.

Ive used cascade on a EPIC Pale Ale clone that was to 40+ ibu with additions at 75m,30m,15m, 5m, WP & Dry Hopped and the cascade came through super good, but that was for a Pale Ale with >12% Crystal malt on teh grain bill. I dont think you would even know on this style cos of the yeast and malts being the show. I have 14g of Hallertau in the fridge but forgot to vac seal them and thought cascade would be ok.
