So i was up at Grumpys on the weekend and has some of their stout. blimey was it good! im not a huge stout person but this was something else, never has a stout been so delicious :p

it seemed chocolately and smooth.

does anyone who knowns a recipe that would return a similar result??

So im making this on the weekend. Just went through the recipe with Tom from the Jovial Monk.

its a partial but close to an all grain...

450grams oats - baked at 90*C and then cooked/boiled at 32*C for half an hour? this is to get rid of something or other....

450grams flaked barley

250grams chocmalt
100grams black malt

remainder of the grain bill will be a pale malt - 2.0-2.5kg
and if he has any brown malt he will throw that in too.


100grams of 85%cocoa chocolate, melted, mixed in during the boil


small amount of light dry malt extract



then using simcoe hops to bring it up to 30-35IBU

and nottingham ale yeast.


can someone comment? im not entirely sure, with the oats, after i have let them sit for half an hour. i dump them into my mash yes? along with all the other grains. and i add the chocolate during the boil.

what times should i add the hops?

An American Oatmeal Stout it looks like.
You'd better get Tom to assist here. Boiling the oats is an unusual step.

its not really boiling, its keeping them in water at 32*C for half an hour to extract something that will clog up the mash?
 
I've used Uncle tobys quick oats straight in the mash with good results. No need to cook beforehand.
 
He is probably getting you to do a beta glucan rest, however that rest is between 40-50 degrees not 32 degrees.
There's quite a bit of oats there, so a beta glucan rest might be necessary.

It's an unusual recipe he has given you.
