Just in case anyone was watching for the results of this, working backwards after the sugar addition on day 3 I got -

Est Original Gravity: 1.089 SG, Read Gravity: 1.085 SG.
Est Final Gravity: 1.023 SG, Currently: 1020 SG
Estimated Alcohol by Vol: 8.75 %
Bitterness: 67.3 IBU Calories: 90 cal/l
Est Color: 6.1 SRM Actual colour ~7 SRM

Just after 8 days, good work US-05!
Still has a pretty decent head in the fermenter and still has plenty of yeast in suspension, so its got a few days left to go and should be around 1.018/1.015 when finished so ABV should be around the target (a fair bit of candied sugar was left on pots/spoons/floor/me - not popular). If the tasty hydo sample is anything to go by it'll be great (if you like passionfruit).

Edit: now to bottle or keg :unsure: .
 
I would also up the 5 and DH additions to 30 gm, this should get you closer to an aroma like stone and wood. Below is my SMASH galaxy blonde for comparison.

Speedie, in what way would he be surprised using citra vs galaxy? One would assume, expectedly, that the beer will take on the characteristics of citra.

Can you please elaborate.

No offense, but 10 measly grams for the dry hop addition seems overly restrained. I'm enjoying a Bell's Hopslam inspired DIPA we brewed as we speak. We dry hopped with 2 ounces (~56 g) of Simcoe from days 7-14 and 3 ounces (~84 g) of Centennial from days 21-28. We also added an entire kg of table sugar at the end of the boil (didn't feel comfortable using honey...yet). This was for 6.5 gallon batch. You are making an imperial IPA after all. What yeast are you using?

Just picked up some Columbus, Amarillo, and Cascade flowers for an IPA we're brewing tomorrow. Can't wait.

I was going to process the sugar using the GLS candi sugar method to a pale gold which should bump the SRMs to about 7. Any thoughts or glaring errors in the bill?
 
+1 for upping the dry hop but -1 for the table sugar.

if you already have the hops and that's all of them i'd cut 5 grams min off the 60 and 30 min editions and try to get min 20-25g dry hop.
with that high an AA% in galaxy you should be getting a nice strong hop aroma off that amount of hops.

I have an APA in secondary that's getting 30g of cascade added. it's a lower AA% hop but it's a smaller beer.
