I've used a Grainfather with the new Connect controller for cooking a huge 5+kg sous vide beef roast. It turned out excellent after 40 hours in the GF and a few minute caramelisation / banksia cone smoke infusion in the kamado.
I reckon doing a whole turkey, sous vide, straight from frozen would be the go.
