So i got me a 3 gallon glass carboy and am gonna buy some bulk honey from Australian Beekeepers Direct. Can someone help me with the rest of the recipe? :)
I was going to get a champagne yeast, is that ok?
Also how much honey and water do i need for 3 gallons?

I just want to get it right coz it's gonna take a looong time to ferment :(

A quick and dirty recipe. Just break the honey with water until SG 1.060 then add champagne yeast and disappear for about 4 weeks, bottle and leave for another 4 weeks.

Champagne yeast ferments it down to near 1.000 and the mead tastes really dry. The initial nose is similar to white wine. For a sweeter mead and maybe a little more funky, use an ale yeast and maybe some cloves etc.

Every batch of honey is different and will produce different gravities when mixed. I've found that about 1.5 kg of honey with water to make around 4.5 litres will give an S.G of 1.1 to 1.2.

There are multiple types of yeast that can be used. Champagne yeast from memory will brew fast but may require more aging to remove the rocket fuel taste from mead. Then again, mead needs to 'age' alot longer than beer. I've gotten to the stage where I'm letting my mead age for 6 months before bottling.
