First No chill cube...smells apple ish

Hi guys,

I brewed a simcoe/citra IPA last week and decided to stick it in a cube until the fermenting fridge was free.

Today I poured it into the fermenter and the viscosity of the wort seemed thick and also had an apple`ish smell.

I continued and put the yeast in to see how it would go but I suspect that there is an infection (this would be the first I have experienced).

Any thoughts?

Should I wait or ditch the batch?
 
If the lid doesn't seal properly when no chiling, wort can get infected. Apple doesn't sound as bad as infected worts of my experience so I'd be inclined to let it go for a bit and see.
When done properly, nc is as safe as you can get but you need to be careful.
 
I was more worried about the viscosity.

Admittedly, my cube is a 17LT and my intended volume was 21 lt into the fermenter.

I'm guessing the top water required would have made this better.

Guess ill have to wait and see.
