Folk, about to put one of these into fermentor - what's the best temp to ferment at - Was thinking 20degC?

Cheers Mike

Fermentis say 15-24C. Cooler will give a cleaner beer, warmer will be fruitier. Up to you what you want, but 20C should be good. It's probably really a kolsch yeast. It should give you a nice summer drinker if not a full on wheat beer.

Great wheat yeast but beware it's a very slow starter ( can be up to 48 hours )

Yeah, I have heard lots of different things about this yeast. Some good, some terrible! I only have a 7 day ferment window as we're moving house, so will keep it at 20 and hope it charges away.

Cheers - Mike

*** Update ***

OK, so I wacked some coriander stems / leaves in a pot, along with one orange rind. Boiled that for 8 mins and added to brew, sloshed in the wort, filled to 20l and wacked in yeast.

That K-97 fired up within 3 hours. I ended up having a huge arvo / evning at the CYC in Syd, came back to the brew this arvo, it was still sitting at 25deg and had dropped from 1032 to 1008 in just over 28 hours!?!

Had a taste - it is unbelievably similar to Hooegarden (spell?), colour is smack on, flavour and aroma are the same, it's just a little too bitter. I'm pretty blown away, it's going really well. Perfect banana esthers, it's all heading in the right direction.

Have now pulled it back to 20deg and expect it to be finished within the next 3 days.

Cheers - Mike
