Hi Guys.

Whats the difference between Dried malt & Liquid Malt?

Sorry couldn't resist that one :p

In a very basic nut shell they are made the same, with the liquid concentrated extract the wort goes to a evapourator after it leaves the brewhouse, ussually straight from the whirlpool after the kettle. The evaporator works by heating it under a vacumm untill the required amount of water is removed.
Dry malt can be done is a couple different ways, one the wort is basically put out on flat trays and heated till dry, you then end up with whats like a big cake of dry malt which is then crushed up into powder.
The other way dry malt is made is by spray drying, basically the wort is sprayed into a stream of hot air to dry, the final product from this is already in a powder form not requiring crushing up like the other way.

For partials is there any difference in which one u use?

Other than factoring in 20% water in the liquid malt, not really.
 
And for the same reasons that liquid malt contributes less to the O.G. , it gives less alcohol than the same weight of DME.

In a 22 litre batch, each kilo of DME will contibute aprox 1.9% alcohol, but LME will contribute about 1.6% alcohol per kilo.
These figures assume a 90% conversion of sugars to alcohol, and I can't remember whether the alcohol percentages are by weight or volume, but either way, they give an indication of the relative alcohol content of a brew made with one, when compared to a brew made with the other.
