Hi guys just wanted to make a really nice malt driven dark beer without to much hop influence any recipes would be appreciated as well as thoughts on grains and hops.

i thought maybe.....

1 can coopers light malt
1 can coopers amber malt
1 kilo of dark dry malt
200g choc malt
50g fuggles for 40 mins

s04 yeast
23 litres

ebc= 51.3
ibu = 21.6

og 1058
should give about 6.2% in bottle

I see you're already adding 200g choc which is a fair bit from my experience (but I like that)

Throw in some biscuit, maybe some roasted barley...

Sounds like a nice smooth coffee/chocolate porter. For a little more malt complexity I would make the chocolate 125g and add 125g Special B (i prefer dingeman's)
I planned a smoked porter last night with smoked rye and smoked chipotle chilli - I am afraid I am going to have to steal the name
Deadwood
Smoked Porter
:ph34r:
EDIT: Smoked Rye????? Dunno where that came from. Should read peat-smoked malt (inspired by Stone's Smoked Porter)
