Thanks for the replies fellas, I put on a brew straight after posting this topic and didnt get a chance to read it till afterwards. Thanks for all that info Tony! it has really helped me to better understand different malts.

I ended up using

86% weyermann pils
3% Cara I
3% Cara II
3% Cara red
1% pale choc

10 kg malt bill for a double batch

Tettnanger and spalt hops (Man I need promash!)

should be interesting. any thoughts?
